Top Five Unhealthiest Junk Foods

After a long winter Spring is finally here and with it comes beach season. I know that like most of you I personally am out of shape and I want my body back! So I thought that I would share these great tips from Kimberly Snyder, celebrity nutritionist and author of The Beauty Detox Solution. Stay away from these five foods to stay bikini ready all spring!

1.      Fried chicken

Made from conventional chicken laden with hormones and antibiotics, covered with gluten-containing breading and chemicals like MSG and salt, and fried in cheap, rancid oils, fried chicken is high in calories, fat, and other chemicals that can make you sick. Skip it altogether. Please, please just never eat fried chicken.

2.      Deep fried cheese sticks

Take cheese (loaded with fat, salt, hormones and antibiotics), bread it, and deep fry it. How does that even sound as if it might be “food”? Skip them and have some veggie sticks with hummus, instead.

3.      Fish and chips

Many people select this as a “healthy” alternative in fast food, but it is anything but that. Fish serves as a sponge that mops up all of the toxic chemicals from the sea. Bread it in wheat flour (gluten) and fry it up, and you’re looking at an unhealthy meal. Avoid fish unless you know where it comes from, and opt for a salad instead.

4.      Pepperoni pizza

Cheese and white flour combined with nitrosamine-containing salty processed meats, pizza is toxic and unhealthy. Why not try some brown rice or quinoa pasta with tomato sauce instead?

5.      Nachos

Corn chips loaded with cheese, meat and beans and then dipped in sour cream? Really?? Dairy, hamburger, salt, and GMO corn are just a few of the health issues associated with this high fat, high calorie snack. Instead, have some vegetable sticks dipped in salsa.

Valentine’s Day Sweets For Your Sweet Tooth!

Whether or not you have that special someone to share this Valentine’s Day with a gals gotta have her sweets right? So, I thought I would share some great Valentine’s Day sweets for your sweet tooth!

Chocolate Covered strawberries- These are always romantic and always in season! Not to mention delicious! Berries.com has some yummy looking ones here.

Chocolate covered pretzels- These taste sooo good and plus they are perfect for Valentine’s Day! (if you’re looking for a healthier option try yogurt covered pretzels they are even better!)

Chocolates- Need I say more?


Fudge- Mmmmm….there is nothing like homemade fudge. But if your not one to bake (or you simply don’t have the time) Swiss Colony has some yummy fudge here!

If chocolate isn’t your thing then how about Nuts or some other sort of Valentine’s Day candy? They would make a lovely treat as well!

Okay, so I actually didn’t have a “date” to share these delicious box dinners with.  Instead, I had a friend over and we tried them together.  We got to sample the Creamy Basil Parmesan Chicken & Pasta from Macaroni Grill and the Orange Chicken from Wanchai Ferry.  I’ve never tried either of these brands before, but I’m no stranger to at-home dinner kits.  Both of these brands delivered high on quality, taste, and most importantly (for me at least), ease.  I love meals that I can make with only the smallest amount of cleanup.  These definitely fit the bill.

Day 4: Progresso Gift Pack

Alright, we’ve finally made it to Day 4!  I apologize greatly for the delay – a series of medical mishaps have kept me away from my computer.  However, there will still be 12 giveaways for you fabulous gals, even if I might be suffering from the plague.

MyBlogSpark sent me a Progresso gift pack that included several cans of the new Reduced Sodium soup, as well as an exercise DVD and some light workout gear.  The package arrived at just the right time, seeing that the town I live in has received about eight inches of snow in the past twenty four hours.  Soup is essential to survival in weather like this.  Progresso might have sacrificed sodium in their new blends, but they certainly haven’t sacrificed taste.  I don’t have high cholesterol, but anything with too much salt causes my face to become a little puffy, so I certainly appreciate this new option.

After all holiday eating binges, healthy food and exercise is going to be the name of the game come January.

The Great Stuffing Debate from Swanson: $150 Giveaway

People may come for the turkey, but they stay for the fixings.  For me, that’s the stuffing.  In fact, I’d be fine if there was nothing on the table BUT stuffing.  Box stuffing misses so many of the complex flavors that are in homemade – sweet, savory, salty…  When made right, stuffing is heaven in a bowl.

Of course, not everybody agrees on what should go into good stuffing.  Thankfully, my family is pretty much on agreement when it comes to this dish – but check out this hilarious video from Swanson on what happens when stuffing goes wrong.

Swanson contacted me earlier this month and sent me a gift card to help with my Thanksgiving preparation, and of course, to pick up some Swanson broth.  I used it to create the stuffing for my department Thanksgiving.  I don’t know if my co-workers were hoping for different ingredients, but I know I loved the results!

I adapted Ina Garten’s Sausage & Herb Stuffing recipe, which can be found here.

  • 16 c 1″ bread cubes, sourdough
  • 1 stick unsalted butter
  • 2 c sweet onion
  • 1 c diced celery
  • 2 Granny Smith apples (unpeeled, cored, large diced)
  • 2 tbs parsley (fresh or dried)
  • 1/2 tbs salt
  • 1/2 tbs black pepper
  • 1 lb spicy Italian sausage, casings removed
  • 1 c Swanson Chicken Broth
  • 1 c dried cherries
  1. Preheat oven to 300 degrees F.
  2. Place cubes in single layer on baking sheet and bake 7 minutes.  Remove cubes & place in large bowl.  Turn oven to 350.
  3. In large saute pan, melt butter & add onions, celery, apples, parsley, salt & pepper.  Saute over medium heat for 10 minutes, until vegetables are softened.  Add to bread cubes.
  4. In same saute pan, cook sausage on medium heat for about 10 minute (until brown & thoroughly cooked).  Break up with fork as cooking.  Add to bread cubes & vegetables.
  5. Add chicken broth & cherries to bowl, mix well, and pour into large baking dish.
  6. Bake 30 minutes, until browned on top & hot in the middle.

Bake for a Cure: Zucchini Cake

Last week, I was gifted what was quite likely 2010′s largest zucchini.  So big, it actually took me over an hour to peel and grate.  After spending two weeks trying to use up all the apples I picked, I wanted to use up the zucchini quickly.  I made a batch of biscuits (which have a slightly odd aftertaste) that I’m going to be using for chicken and biscuits over the weekend.  The rest went into a series of zucchini cakes, which I’ve been enjoying greatly.  My recipe is below.

Zucchini Cake (makes two 8″ cakes):

  • 4 Large Eggs
  • 1 Cup Cottage Cheese
  • 3 Cups Flour
  • 2 Cups Brown Sugar
  • 1 Large Grated Apple
  • 2 Cups Grated Zucchini
  • 1/4 Cup Vegetable Oil
  • 1 Tsp Salt
  • 1 Tsp Baking Soda
  • 2 Tsp Baking Powder
  • 1 Cup Chocolate Chips
  • 1/2 Cup Diced Nuts (Your choice – I used Macadamia)
  • 1 Tbs Chili Powder
  • 2 Tbs Cinnamon
  1. Grate zucchini and place in strainer.  Allow to drain for 15 minutes, then squeeze excess moisture out.
  2. Peel and dice one large apple, then set aside.
  3. Preheat oven to 375.  Grease pans.
  4. Mix all ingredients in one large mixing bowl.
  5. Transfer to greased pans.
  6. Bake for about 35 minutes, or until a toothpick inserted in the center of the cake comes out clean.  I had trouble getting the center of my cake to cook, so your baking time may be different than mine.
  7. Allow cake(s) to cool for about 10 minutes, then turn out onto wire rack and allow to cool completely.
  8. Frosting is optional.  A simple cream cheese frosting would work well, but the “cake” is relatively sweet and somewhat bread-like, so it’s delicious on it’s own as well.

Bake for a Cure Pt. 3: Apple Cupcakes with Cinnamon Frosting

Last weekend, I did something I’ve been wanting to do for months:  I went apple picking!  I have no idea why this activity has been so persistently stuck in my mind, but I did find the outing very satisfying.  It was a beautiful day, and cool enough that there weren’t hordes of bees swarming the falling/rotting apples.  I picked a variety of Gala, Macs, Northern Spy, and Macoun apples.  The apples were huge!

Since payment was based on bag size, not weight, I packed mine to the seams.  After hauling the apples up the nine thousand flights of stairs I have to conquer to arrive at my apartment…  I realized that I had no idea what to do with that many apples.  First, I made applesauce.  Then, I made apple pies.  And my favorite – apple cupcakes!  I’m still obsessing over Cupcake Project, and although I’ve been eying all of her apple creations, that’s not where I worked from.

I took the general idea from Martha Stewart.  My recipe is below.

Cupcake Batter

  • 2 C flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp salt
  • 1 stick melted butter
  • 2 c brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 c shredded apples*

*I used a mix of apples.  Because they were so insanely fresh, there was a lot of juice and not a ton of apple shreds.  If you prefer, you can use 3 or 3.5 cups of apples and fill in the rest with apple juice.  Potentially apple cider – experiment!

  1. Preheat oven to 350.  This batter makes around 30 cupcakes; line pans with cupcake papers ahead of time and set aside.
  2. Whisk the flour, baking soda, cinnamon, nutmeg, ginger, and salt in a medium bowl and set it aside.
  3. Mix the butter and sugar in a (large) separate bowl, using an electric mixer.  When they’re pale and fluffy, add in the eggs and vanilla.
  4. Reduce mixer speed to low; add in apples.
  5. Slowly add in flour mixture; scrape sides of bowl down as necessary.  Stir until completely combined.
  6. Divide batter between cups.  I filled mine about halfway, but they didn’t rise enough to make frosting easy.  I recommend going more around 3/4 full and make fewer if necessary.
  7. Bake about 20 minutes, until cupcakes are slightly springy to touch.
  8. Remove from cupcake tins and transfer to a wire rack; let them cool there.

Honey-Cinnamon Frosting

  • 1 1/4 c confectioner’s sugar
  • 1 stick butter, room temp
  • 1 tbs honey
  • 1/8 tsp cinnamon
  • 1/2 tsp lemon extract

Combine all ingredients in medium bowl.  Mix with electric mixer until smooth (about 3 minutes).

I piped the frosting onto the cupcakes using a pastry bag and star tip.  The best advice ever?  Put the pastry bag onto a cup or jar the way you would a garbage bag onto the can, with the edges folded over the lip.  Scoop frosting into the bag, and voila!  No sticky mess!

Frosting may need to be refrigerated briefly before using on cupcakes.  Make sure the cupcakes are completely cool beforehand as well.

Once again, my photo doesn’t do the product justice.  Trust me, though – they’re delicious!



Bake for A Cure: Tiramisu Cupcakes!

Sorry for the photo quality.  Once again, I forgot to take pictures until the food was almost gone!

The office I work in has a tradition.  For each birthday staff birthday, the person who last had a birthday brings in a treat of some sort.  This is perfectly acceptable, and it’s nice that everyone celebrates together.  However, these are busy people, and half are men – which I wouldn’t count against them, except we work for a company that sells power equipment.  These guys don’t make frosting.  Which means…  Generally, the birthday treats come from the supermarket.

There have been two birthdays since I joined the crew, and I’ve baked for both of them.  For the first, I dreamed up a White Chocolate Hazelnut Pie, which I swirled with raspberry jam and baked into a beautiful crust.  The second was this week, and the birthday belonged to my beloved supervisor – who just so happens to be battling Breast Cancer.  So, of course, I needed to make something extra special for her.

After much hemming and hawing, I finally got her to tell me that her favorite dessert is the Tiramisu at Olive Garden.  Totally adorable.  But ladies…  Olive Garden ain’t got nothin’ on me.  That being said – I’ve never made Tiramisu before.  So, I turned to Google.  After a quick search, I discovered my new favorite thing ever:  Cupcake Project.  There, I discovered not only a fabulous recipe for Tiramisu Cupcakes, but also one for homemade lady fingers.  I’m not going to copy and paste the recipe to this page, but I will share my thoughts.

Tips on the Ladyfingers: I double the batter to make 24 cupcakes, but absolutely didn’t need to.  The cupcake liners should only be filled about halfway, and I found that this batter went way farther because of that.  The original recipe can probably make about 18 cupcakes.  If you fill the liners further, you can frost them like regular cupcakes – and it that case, you’ll need to bake them for about 12 minutes.

Here’s the recipe for the actual Tiramisu Cupcake creation & assembly – again, credit to Cupcake Project.

Yield: 12 Cupcakes

  • 6 egg yolks
  • 3/4 C white sugar
  • 2/3 C milk
  • 1 1/4 C heavy cream
  • 1/2 tsp vanilla extract
  • 1 lb mascarpone cheese
  • 1 C strong brewed coffee, room temperature
  • 2 tbsp rum
  • ladyfingers baked in cupcake wrappers (see my post on ladyfingers for instructions)
  • 1 tbsp unsweetened cocoa powder
  • a small amount of dark chocolate for chocolate curls (optional)
  1. In a medium saucepan, whisk together egg yolks and sugar until well blended.
  2. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils.
  3. Boil gently for 1 minute, remove from heat, and allow to cool slightly.
  4. Cover tightly and chill in refrigerator 1 hour.
  5. Remove from refrigerator and whisk in mascarpone until smooth.  Set aside.
  6. In a medium bowl, beat cream with vanilla until stiff peaks form. Set aside.
  7. In a small bowl, combine coffee and rum.
  8. Drizzle approximately 1 tbsp + 2 tsp of the coffee/rum mixture over each pre-baked ladyfinger.  Add it a little at a time and wait for it to absorb into the ladyfingers before adding more.  When it stops absorbing, stop adding more.
  9. Spread the mascarpone mixture over the soaked ladyfingers.
  10. Pipe or spread the whipped cream over the mascarpone.
  11. Sprinkle with cocoa powder.
  12. Optionally, top with chocolate curls.  Make the chocolate curls using a vegetable peeler on a piece of chocolate.  It works best if the chocolate is slightly warm, but not melty.
  13. Cover and refrigerate 4 to 6 hours, until set.

If you want to make larger cupcakes but still incorporate lots of filling, just cut a wedge out of the center and fill them with the mascarpone mix.

Technically, this isn’t a recipe I created…  Unfortunately, I just didn’t have time to photograph and write about the Bourbon Apple Pies I made tonight, which were from scratch based on my own invention.  However, I wanted to make sure that I did incorporate a second recipe for the week!  Next week I’ll whip up something extra cool for ya’ – I ordered some fun extracts from Faerie’s Finest, and I’m hoping they’ll arrive in time for some experimentation.  I also have mint chocolate chip cupcakes on the brain, so we’ll see what happens!
